Let me start by saying, I looooooove Italian wedding soup! It’s so good! The first time I tried it was in the deli department of my neighborhood grocery store. I was in high school and so impressed with the sample I bought an entire jug. I instantly fell in love with the flavor profile. The mini meatballs, cute little acini de pepe pasta, and melted parmesan. I’d never tasted a soup like it. Rich, hearty, and savory. My high school self felt like I’d just experienced the most luxurious soup of my young life.
This is an easy, one-pot recipe. You would have to do something diabolical to mess this one up. Something to consider: don’t skimp on the cheese. One thing I know for sure is the best soups are ones you need to spoon through a layer of cheese to get to. When I make my Italian wedding soup, I use shaved Parmesan so I can experience a nice, gooey layer of cheese.
